Ingredients

  • 1/2 cup granulated sugar
  • 2 large eggs
  • 1 teaspoon vanilla extract
  • 1/4 cup sour cream
  • 1/4 cup heavy cream
  • 1 Graham cracker crust (9-inch)

Instructions

  1. Preheat oven to 350°F (175°C).
  2. In a large bowl, beat the cream cheese and sugar until smooth.
  3. Beat in the eggs one at a time, then stir in the vanilla extract.
  4. Gently mix in the sour cream and heavy cream until just combined.
  5. Pour the batter into the prepared graham cracker crust.
  6. Bake for 30-35 minutes, or until the edges are set and the center is slightly jiggly.
  7. Let the cheesecake cool in the oven with the door ajar for 1 hour.
  8. Refrigerate for at least 4 hours, or preferably overnight, before serving.

Notes

  • For a richer cheesecake, you can add a tablespoon of lemon zest.
  • If you don’t have a graham cracker crust, you can make your own by crushing 1 ½ cups of graham crackers and mixing them with ¼ cup melted butter and 2 tablespoons sugar. Press into the pan.
