- 8 ounces cream cheese, softened
- 1/2 cup granulated sugar
- 2 large eggs
- 1 teaspoon vanilla extract
- 1/4 cup sour cream
- 1/4 cup heavy cream
- 1 Graham cracker crust (9-inch)
Instructions
- Preheat oven to 350°F (175°C).
- In a large bowl, beat the cream cheese and sugar until smooth.
- Beat in the eggs one at a time, then stir in the vanilla extract.
- Gently mix in the sour cream and heavy cream until just combined.
- Pour the batter into the prepared graham cracker crust.
- Bake for 30-35 minutes, or until the edges are set and the center is slightly jiggly.
- Let the cheesecake cool in the oven with the door ajar for 1 hour.
- Refrigerate for at least 4 hours, or preferably overnight, before serving.
Notes
- For a richer cheesecake, you can add a tablespoon of lemon zest.
- If you don’t have a graham cracker crust, you can make your own by crushing 1 ½ cups of graham crackers and mixing them with ¼ cup melted butter and 2 tablespoons sugar. Press into the pan.
- Avoid overmixing the batter, as this can lead to cracks.
