Ingredients

  • 1 lb boneless, skinless chicken breasts, sliced thinly
  • 2 tablespoons olive oil
  • 1 large onion, sliced
  • 2 bell peppers (any color), sliced
  • 1 packet fajita seasoning (or homemade blend)
  • Juice of 1 lime
  • Optional toppings: sour cream, shredded cheese, salsa, guacamole, chopped cilantro
  • Flour or corn tortillas

Instructions

  1. In a bowl, toss the sliced chicken with half of the fajita seasoning and lime juice.
  2. Heat 1 tablespoon of olive oil in a large skillet or cast-iron pan over medium-high heat.
  3. Add the seasoned chicken to the skillet and cook until browned and cooked through, about 5-7 minutes. Remove chicken from the skillet and set aside.
  4. Add the remaining 1 tablespoon of olive oil to the skillet. Add the sliced onions and bell peppers.
  5. Cook the vegetables, stirring occasionally, until they are tender-crisp, about 5-7 minutes.
  6. Add the remaining fajita seasoning to the vegetables and stir to coat.
  7. Return the cooked chicken to the skillet with the vegetables. Stir to combine and heat through for another 1-2 minutes.
  8. Warm tortillas according to package directions.
  9. Serve the chicken and vegetable mixture in warm tortillas with your favorite toppings.

Notes

  • For a spicier kick, add a pinch of cayenne pepper or a diced jalapeño to the vegetables.
  • Homemade fajita seasoning can be made with chili powder, cumin, paprika, garlic powder, onion powder, oregano, and salt.
