- 1 lb boneless, skinless chicken breasts, sliced thinly
- 2 tablespoons olive oil
- 1 large onion, sliced
- 2 bell peppers (any color), sliced
- 1 packet fajita seasoning (or homemade blend)
- Juice of 1 lime
- Optional toppings: sour cream, shredded cheese, salsa, guacamole, chopped cilantro
- Flour or corn tortillas
Instructions
- In a bowl, toss the sliced chicken with half of the fajita seasoning and lime juice.
- Heat 1 tablespoon of olive oil in a large skillet or cast-iron pan over medium-high heat.
- Add the seasoned chicken to the skillet and cook until browned and cooked through, about 5-7 minutes. Remove chicken from the skillet and set aside.
- Add the remaining 1 tablespoon of olive oil to the skillet. Add the sliced onions and bell peppers.
- Cook the vegetables, stirring occasionally, until they are tender-crisp, about 5-7 minutes.
- Add the remaining fajita seasoning to the vegetables and stir to coat.
- Return the cooked chicken to the skillet with the vegetables. Stir to combine and heat through for another 1-2 minutes.
- Warm tortillas according to package directions.
- Serve the chicken and vegetable mixture in warm tortillas with your favorite toppings.
Notes
- For a spicier kick, add a pinch of cayenne pepper or a diced jalapeño to the vegetables.
- Homemade fajita seasoning can be made with chili powder, cumin, paprika, garlic powder, onion powder, oregano, and salt.
- Ensure chicken is cooked to an internal temperature of 165°F (74°C).
