- 1 cup milk

- 1/2 cup all-purpose flour
- 1 teaspoon salt
- 1/2 teaspoon black pepper
- 1/4 teaspoon dried thyme
- For the Dumplings:
- 2 cups all-purpose flour
- 1 teaspoon baking powder
- 1/2 teaspoon salt
- 3/4 cup milk
- 2 tablespoons melted butter
Instructions
- In a large pot or Dutch oven, combine chicken, onion, celery, carrots, and chicken broth. Bring to a boil, then reduce heat and simmer for 20-25 minutes, or until chicken is cooked through.
- Remove chicken from the pot and shred it. Set aside.
- In a separate saucepan, melt butter over medium heat. Whisk in flour and cook for 1-2 minutes until lightly golden.
- Gradually whisk in milk until smooth. Bring to a simmer, stirring constantly, until thickened.
- Stir the thickened milk mixture into the pot with the vegetables and broth.
- Season with salt, pepper, and thyme. Return the shredded chicken to the pot.
- In a medium bowl, whisk together dumpling ingredients until a soft dough forms.
- Drop spoonfuls of the dumpling dough onto the simmering chicken mixture.
- Cover the pot and simmer for 15-20 minutes, or until dumplings are cooked through and fluffy.
- Serve hot.
Notes
- For a richer flavor, you can use chicken thighs instead of breasts.
- If you prefer a thicker stew, you can use less chicken broth or add a cornstarch slurry.
