  • For the Dumplings:
  • 2 cups all-purpose flour
  • 1 teaspoon baking powder
  • 1/2 teaspoon salt
  • 3/4 cup milk
  • 2 tablespoons melted butter

Instructions

  1. In a large pot or Dutch oven, combine chicken, onion, celery, carrots, and chicken broth. Bring to a boil, then reduce heat and simmer for 20-25 minutes, or until chicken is cooked through.
  2. Remove chicken from the pot and shred it. Set aside.
  3. In a separate saucepan, melt butter over medium heat. Whisk in flour and cook for 1-2 minutes until lightly golden.
  4. Gradually whisk in milk until smooth. Bring to a simmer, stirring constantly, until thickened.
  5. Stir the thickened milk mixture into the pot with the vegetables and broth.
  6. Season with salt, pepper, and thyme. Return the shredded chicken to the pot.
  7. In a medium bowl, whisk together dumpling ingredients until a soft dough forms.
  8. Drop spoonfuls of the dumpling dough onto the simmering chicken mixture.
  9. Cover the pot and simmer for 15-20 minutes, or until dumplings are cooked through and fluffy.
  10. Serve hot.

  • For a richer flavor, you can use chicken thighs instead of breasts.
