Description
These Cranberry Brie Bites are the perfect appetizer for any occasion. They are easy to make, incredibly delicious, and combine the tartness of cranberries with the creamy richness of brie cheese, all encased in a flaky puff pastry.

- 1 sheet puff pastry, thawed
- 1 (8 ounce) wheel brie cheese, rind removed and cut into 1-inch cubes
- 1/4 cup whole berry cranberry sauce
- 1 egg, beaten (for egg wash)
- Optional: Fresh rosemary sprigs, for garnish
Instructions
- Preheat your oven to 400°F (200°C). Lightly grease a mini muffin tin or line a baking sheet with parchment paper.
- Unfold the thawed puff pastry sheet and cut it into 12 equal squares.
- Gently press each puff pastry square into the cups of the mini muffin tin, creating a small “cup” shape. If using a baking sheet, place the squares on the sheet and gently press the center to create a slight well.
- Place one cube of brie cheese into each puff pastry cup.
- Top each brie cube with about 1 teaspoon of cranberry sauce.
- Brush the edges of the puff pastry with the beaten egg wash.
- Bake for 12-15 minutes, or until the puff pastry is golden brown and puffed, and the brie is melted and gooey.
- Let the bites cool slightly in the tin for a few minutes before carefully removing them.
- Garnish with fresh rosemary sprigs, if desired. Serve warm.
Notes
- Ensure your puff pastry is fully thawed but still cold for the best results.
- Don’t overfill the pastry cups with cheese or cranberry sauce, as they can overflow during baking.
- If you don’t have a mini muffin tin, you can bake these on a parchment-lined baking sheet. They may spread a little more.
- For a sweeter bite, you can use a cranberry-jam instead of whole berry sauce.
