  • 2 boneless, skinless chicken breasts (about 68 oz each)
  • 1/2 cup all-purpose flour
  • 1 teaspoon salt

  • 2 large eggs
  • 1 cup Italian-style breadcrumbs
  • 1/4 cup grated Parmesan cheese
  • 3 tablespoons olive oil
  • 1 cup marinara sauce
  • 4 slices mozzarella cheese
  • 2 tablespoons chopped fresh parsley (optional, for garnish)

Instructions

  1. Preheat oven to 400°F (200°C).
  2. Cut each chicken breast in half horizontally to create thinner cutlets. Pound them lightly to an even thickness of about 1/2 inch.
  3. In a shallow dish, combine flour, salt, pepper, and garlic powder.
  4. In another shallow dish, whisk the eggs.
  5. In a third shallow dish, combine breadcrumbs and grated Parmesan cheese.
  6. Dredge each chicken cutlet first in the flour mixture, shaking off excess.
  7. Dip the floured cutlet into the whisked eggs, ensuring it’s fully coated.
  8. Press the egg-coated cutlet into the breadcrumb mixture, coating both sides evenly.
  9. Heat olive oil in a large oven-safe skillet over medium-high heat.
  10. Carefully place the breaded chicken cutlets in the hot skillet and cook for 2-3 minutes per side, until golden brown. You may need to do this in batches.
  11. Remove the skillet from the heat. Spoon marinara sauce over each chicken cutlet.
  12. Top each cutlet with 1-2 slices of mozzarella cheese.
  13. Transfer the skillet to the preheated oven and bake for 10-15 minutes, or until the chicken is cooked through and the cheese is melted and bubbly.
  14. Garnish with fresh parsley, if desired, before serving.

  • For crispier chicken, you can bake the breaded cutlets on a wire rack set over a baking sheet for 10 minutes before adding sauce and cheese.
