- 2 boneless, skinless chicken breasts (about 6–8 oz each)
- 1/2 cup all-purpose flour
- 1 teaspoon salt
- 1/2 teaspoon black pepper

- 2 large eggs
- 1 cup Italian-style breadcrumbs
- 1/4 cup grated Parmesan cheese
- 3 tablespoons olive oil
- 1 cup marinara sauce
- 4 slices mozzarella cheese
- 2 tablespoons chopped fresh parsley (optional, for garnish)
Instructions
- Preheat oven to 400°F (200°C).
- Cut each chicken breast in half horizontally to create thinner cutlets. Pound them lightly to an even thickness of about 1/2 inch.
- In a shallow dish, combine flour, salt, pepper, and garlic powder.
- In another shallow dish, whisk the eggs.
- In a third shallow dish, combine breadcrumbs and grated Parmesan cheese.
- Dredge each chicken cutlet first in the flour mixture, shaking off excess.
- Dip the floured cutlet into the whisked eggs, ensuring it’s fully coated.
- Press the egg-coated cutlet into the breadcrumb mixture, coating both sides evenly.
- Heat olive oil in a large oven-safe skillet over medium-high heat.
- Carefully place the breaded chicken cutlets in the hot skillet and cook for 2-3 minutes per side, until golden brown. You may need to do this in batches.
- Remove the skillet from the heat. Spoon marinara sauce over each chicken cutlet.
- Top each cutlet with 1-2 slices of mozzarella cheese.
- Transfer the skillet to the preheated oven and bake for 10-15 minutes, or until the chicken is cooked through and the cheese is melted and bubbly.
- Garnish with fresh parsley, if desired, before serving.
Notes
- For crispier chicken, you can bake the breaded cutlets on a wire rack set over a baking sheet for 10 minutes before adding sauce and cheese.
- Feel free to use your favorite store-bought or homemade marinara sauce.
- Other cheeses like provolone or a blend of Italian cheeses can be used instead of or in addition to mozzarella.
