Description

This herb-crusted rack of lamb is tender, juicy, and packed with fresh herb flavor. A crisp breadcrumb crust combined with garlic, rosemary, and Dijon mustard creates a beautifully golden exterior while keeping the lamb perfectly succulent inside.


Ingredients

  • 1 rack of lamb (8 ribs)
  • 2 tbsp olive oil
  • 2 tbsp Dijon mustard
  • 3 garlic cloves, minced
  • 1 cup breadcrumbs
  • 2 tbsp rosemary, chopped
  • 2 tbsp parsley, chopped
  • ½ tsp salt
  • ½ tsp black pepper

Instructions

  1. Preheat oven to 400°F (200°C).
  2. Sear lamb in olive oil until browned.
  3. Mix breadcrumbs, garlic, herbs, salt, and pepper.
  4. Brush lamb with mustard and press herb mixture on top.
  5. Roast 15–20 minutes for medium-rare.
  6. Rest 10 minutes before slicing.
