This herb-crusted rack of lamb is tender, juicy, and packed with fresh herb flavor. A crisp breadcrumb crust combined with garlic, rosemary, and Dijon mustard creates a beautifully golden exterior while keeping the lamb perfectly succulent inside.

- 1 rack of lamb (8 ribs)
- 2 tbsp olive oil
- 2 tbsp Dijon mustard
- 3 garlic cloves, minced
- 1 cup breadcrumbs
- 2 tbsp rosemary, chopped
- 2 tbsp parsley, chopped
- ½ tsp salt
- ½ tsp black pepper
Instructions
- Preheat oven to 400°F (200°C).
- Sear lamb in olive oil until browned.
- Mix breadcrumbs, garlic, herbs, salt, and pepper.
- Brush lamb with mustard and press herb mixture on top.
- Roast 15–20 minutes for medium-rare.
- Rest 10 minutes before slicing.
