- 1/4 cup heavy cream

- For the Glaze:
- 2 tbsp cream cheese, softened
- 1 tbsp unsalted butter, softened
- 1 tbsp heavy cream
- 1/2 tsp vanilla extract
- 1 tbsp powdered erythritol (or your preferred keto sweetener)
Instructions
- Preheat your oven to 350°F (175°C). Line a baking sheet with parchment paper.
- In a large bowl, whisk together almond flour, coconut flour, erythritol, baking powder, cinnamon, and salt.
- Add the softened butter to the dry ingredients and mix until crumbly.
- In a separate small bowl, whisk together the eggs and heavy cream.
- Add the wet ingredients to the dry ingredients and mix until a dough forms.
- Turn the dough out onto a piece of parchment paper and flatten it into a rectangle, about 1/4 inch thick.
- In a small bowl, mix together the softened butter, erythritol, and cinnamon for the filling. Spread this mixture evenly over the dough, leaving a small border.
- Starting from one long edge, carefully roll up the dough into a log.
- Slice the log into 8-10 cinnamon rolls.
- Place the cinnamon rolls on the prepared baking sheet, spacing them apart.
- Bake for 15-20 minutes, or until golden brown and set.
- While the rolls are baking, prepare the glaze. In a small bowl, beat together the cream cheese, butter, heavy cream, vanilla extract, and powdered erythritol until smooth and creamy.
- Let the cinnamon rolls cool slightly before drizzling with the glaze.
