Description

Melting potatoes are a simple yet incredibly delicious side dish. Thick potato rounds are roasted until golden and crispy, then finished in a buttery broth that soaks into the potatoes, making them soft, creamy, and flavorful inside.


Ingredients

  • 4 Yukon Gold potatoes
  • 3 tbsp butter
  • 1 tbsp olive oil
  • 2 garlic cloves
  • 1 cup chicken broth
  • 1 tsp thyme
  • Salt and pepper

Instructions

  1. Preheat oven to 425°F (220°C).
  2. Peel and slice potatoes into thick rounds.
  3. Toss with olive oil, salt, and pepper.
  4. Roast with butter for 35 minutes, flipping once.
  5. Add broth, garlic, and thyme.
  6. Roast another 10 minutes until tender.
