- 4 Yukon Gold potatoes
- 3 tbsp butter
- 1 tbsp olive oil
- 2 garlic cloves
- 1 cup chicken broth
- 1 tsp thyme
- Salt and pepper
Instructions
- Preheat oven to 425°F (220°C).
- Peel and slice potatoes into thick rounds.
- Toss with olive oil, salt, and pepper.
- Roast with butter for 35 minutes, flipping once.
- Add broth, garlic, and thyme.
- Roast another 10 minutes until tender.
