Ingredients

- 1 pound Velveeta cheese, cubed
- 1 (10 ounce) can Rotel diced tomatoes and green chilies, undrained
- 1/2 cup milk
- 1/4 cup chopped onion (optional)
- 1/4 cup chopped jalapeño (optional)
- 1/4 cup chopped cilantro (optional)
Instructions
- In a medium saucepan, combine Velveeta cheese, Rotel, and milk.
- Heat over low heat, stirring constantly, until cheese is melted and smooth.
- If using, stir in onion, jalapeño, and cilantro.
- Serve immediately with tortilla chips.
Notes
- For a thinner dip, add a little more milk.
- For a spicier dip, use the “hot” version of Rotel or add a pinch of cayenne pepper.
- You can also add cooked ground beef or sausage to the dip for a heartier version.
