Description

A simple and delicious recipe for crispy chicken coated in crushed Ritz crackers.


Ingredients

  • 2 boneless, skinless chicken breasts, cut into 1-inch cubes
  • 1 cup crushed Ritz crackers (about 2 sleeves)
  • 1/2 cup grated Parmesan cheese
  • 1/4 cup all-purpose flour
  • 1 large egg, beaten
  • 1/4 cup milk
  • 1 teaspoon garlic powder
  • 1/2 teaspoon onion powder
  • Salt and freshly ground black pepper to taste
  • Olive oil or vegetable oil for frying

Instructions

  1. In a shallow dish, combine the crushed Ritz crackers, Parmesan cheese, garlic powder, onion powder, salt, and pepper.
  2. In another shallow dish, whisk together the egg and milk.
  3. In a third shallow dish, place the flour.
  4. Dredge each chicken cube first in the flour, shaking off any excess.
  5. Dip the floured chicken into the egg mixture, ensuring it’s fully coated.
  6. Finally, coat the chicken in the Ritz cracker mixture, pressing gently to help the crumbs adhere.
  7. Heat about 1/2 inch of oil in a large skillet over medium-high heat.
  8. Carefully place the coated chicken pieces into the hot oil, being careful not to overcrowd the skillet.
  9. Fry the chicken for 2-3 minutes per side, or until golden brown and cooked through.
  10. Remove the chicken from the skillet and place on a paper towel-lined plate to drain excess oil.
  11. Serve hot.

Notes

  • For extra flavor, you can add a pinch of cayenne pepper to the cracker mixture.
  • If you don’t have Ritz crackers, saltine crackers or Panko breadcrumbs can be substituted, though the flavor will be different.
  • Ensure the oil is hot enough before adding the chicken to achieve a crispy coating.
